Casarecce with light amatriciana sauce

Ingredients

  • 240 g of Casarecce
  • 100 g lean bacon
  • 400 g fresh or peeled tomatoes
  • salt and pepper

Preparing

Put a pot plenty of water to boil, cut the bacon into strips and place in a pan with two tablespoons of water. Cook for the first 3/5 minutes so that the fat of the bacon melts without burning. When the fat of the bacon starts to become transparent, increase the heat and fry the bacon, add the chopped tomatoes and cook for 5 minutes on high heat. When the water boils, add salt and toss the pasta, reduce heat and let the sauce simmer covered, season with salt and pepper. Drain the pasta, pour in the sauce and serve.
