Spaghetti alla Carbonara

Ingredients

  • 350 gr Spaghetti
  • 150 gr Bacon
  • 100 gr grated Pecorino cheese
  • 4 eggs
  • salt and black pepper to taste

Preparing

Bring a large pot of salted water to a boil. Cut bacon in half crosswise and cook in a heavy skillet until crisp. Remove bacon from pan and set asid . Cook the pasta as directed on package. Meanwhile, combine the egg yolks, half the Pecorino cheese and pepper in a medium bowl and beat until well blended. When the pasta is cooked, drain and immediately add to the bowl with the bacon until a creamy sauce forms. Add the remaining cheese and pepper and serve immediately.
